The Bins

Once inside the reduction plant, the herring was weighed and stored in bins. The Binman's job was to keep the cookers full of herring. If he didn't keep a steady flow of herring from the bins to the cookers, the whole reduction process was thrown into chaos. Every guy further down the line operated his machines on the idea that they were going to be kept full of material. If the Binman gave too little or none at all, things broke down, things got burned! As one former Binman put it, "It's not a job that you could just fool around for 10 or 15 minutes. No Way. You can't leave it. You don't stop. You just keep going."
